Bao Buns 3 ways

This Spicy Pickled Carrot is so versatile and will add a burst of flavour and crunch to any Asian inspired meal or sandwich.


Here's the recipe:


  • 2 Grated Carrots

  • 2 Spring Onions

  • 100 ml of Hot Water

  • 20g Sugar

  • 5 Tbsp of Apple Cider Vinegar

  • 1 Tsp of Chilli Oil/Chilli Paste

  • Salt to your taste

  • Peanuts - optional


  1. Simply dissolve the sugar in the hot water (or in a pan) and once this has dissolved, add in the sugar, vinegar, chilli and salt.

  2. Stir this into the carrots and spring onion. Leave this to marinate in the fridge for a couple of hours.

  3. You can even add peanuts for that extra crunch as a garnish.




Breaded Spicy Aubergine Bao Buns with Spicy Pickled Carrot Salad


For around 6-7 Bao Buns, you will need:


1 Aubergine

Breadcrumbs or Panko breadcrumbs

1 Egg

½ tsp Garlic Powder & Chilli Powder to season the egg

Oil for frying



  • Slice the aubergine into thick rounds and dip into a beaten egg, mixed with chilli powder and garlic powder.

  • Coat the aubergine in breadcrumbs (Or panko breadcrumbs) and fry until golden brown.

  • To assemble this Bao, I spread the Bao Bun with some spicy mayonnaise, my carrot salad, grated cucumber and the fried spicy aubergines.


Spicy Katsu Fried Chicken Bao Bun with Spicy Pickled Carrot Salad



For around 5-6 Bao Buns, you will need:


1 Chicken Breast - Flattened

Breadcrumbs or Panko breadcrumbs

1 Egg

½ tsp Garlic Powder & Chilli Powder to season the egg

Oil for frying


  • Slice a chicken breast into thin flat pieces and dip into a beaten egg, mixed with chilli powder and garlic powder.



  • Coat the chicken in breadcrumbs (Or panko breadcrumbs) and fry until golden brown.



  • For the Katsu sauce, I used Japanese Golden Curry mix which was simply dissolved in some hot water and thickened in a pan.



  • To assemble this Bao, I spread the Bao Bun with the katsu sauce, my carrot salad, grated cucumber and the sliced the fried, chicken.






Shredded Hoi Sin Chicken with Spicy Pickled Carrot Salad


For around 4-5 Bao Buns, you will need:


1 Chicken Breast

3 Tbsp of Hoi Sin Sauce

2 Cloves of Garlic

1 Tbsp of Chopped Ginger

Sliced Spring Onions (optional)

  • In a pan, add 2 chicken breasts, chopped garlic, ginger and chilli. I used Sharwoods Hoi Sin Sauce but you can use any. Slow cook the chicken (cover the pan with a lid) for 40-50 mins until it is soft.


  • Take 2 forks and shred the chicken.


  • Add some sliced spring onions for some crunch


  • To assemble this Bao, I spread the Bao bun with some Hoi Sin sauce, a tablespoon of the shredded chicken, my carrot salad and some grated cucumber.







These are the Bao Buns I used. I found them in the frozen section of my local Asian Supermarket. Next goal is to make my own Bao Buns! #watchthisspace
