Cajun Blackened Fish with Dirty Rice – From The Spicery

When I purchased these spice kits from The Spicery, I had no expectations because I was so proud of the variety we have in our spice cupboard at home and always try to incorporate these in mostly every meal. But since I made these dishes from The Spicery, life will never be the same. Yes, a little dramatic, but my family and I were raving on about these meals for days.
It came with 3 kits as pictured below:

I noticed both of the meals included chicken and with some members of my family being flexitarian, I decided to opt for fish. Chorizo and mostly any white fish is a great combo which is why I knew it would work.
For this recipe there were 3 stages. First was to make the ‘dirty rice’ using one of the sachets, along with some chopped celery, onion and chorizo.

The second stage was to make the fish (or chicken) which consisted of the other spice sachet sprinkled over the meat. The meat was then grilled and a ‘little’ butter and lemon juice was added at the end. I don’t really use butter in my cooking unless its Christmas or I am baking, but I have definitely learnt to always grill fish and add butter and lemon juice at the end. It’s amazing!

The third and final stage was to make the sauce which consisted of soaking the last sachet of spices and dried chillies into some hot water and blending this with tomato purée and vinegar. It was super-duper spicy but complimented the grilled and rice very well.

The instructions were so simple to follow and I will definitely be purchasing these spice mixes again. The Cajun seasoning was incredible and I hope to recreate this soon!
