Chilli, Thyme & Garlic Roasted Potatoes

Although everyone has their own way of roasting their potatoes, I decided to take mine on another level and add some little nuggets of flavours to amplify your simple side dish of roasted potatoes.


It doesn’t seem like it but there is in fact a clever technique I learnt to roasting potatoes; By increasing the surface area of your potatoes, it ensures maximum crispiness and for the oil to slowly work its magic…












In this particular recipe, here are the seasonings I used:


  • 1 Tablespoon of Dried Thyme

  • 1 Tablespoon of Garlic Powder

  • ½ a Tablespoon of Chilli Powder (Or you can use Cayenne Pepper/Paprika)

  • ½ a Teaspoon of Dried Sage

  • Salt and Pepper to your taste

  • 1 Tablespoon of Cornflour

  • 3 Tablespoons of Vegetable Oil (I used a large tray for a big quantity)









Chop up your potatoes in cubes and in a mixing bowl, toss the spices and herbs together with the oil. Put the potatoes onto a grease-proof lined baking tray and roast at 220 Degrees Celsius until sizzling and golden brown.

Any kind of seasonings you have in your cupboard would most likely work as potatoes are so versatile.
