Date, Pumpkin, Pecan ‘Mug’ Cake in a Munchkin Pumpkin

Think mug cake, but in a mini pumpkin instead of a mug…
This is the perfect treat for Halloween. It’s so quick and easy to make; The whole process, including cooking time literally took 10 minutes!
I personally think it’s the perfect sweet treat whilst binging on all those scary movies or whatever you're supposed to do on Halloween in the midst of a pandemic...
It just so happens to be eggless and dairy free too (If you take out the white chocolate)
The best thing of all is there is one less thing to wash up as you can throw away the pumpkin once you have finished the cake.

All you need is some measuring spoons and a mixing bowl!
Here's the recipe:
4 Tbsp Self Raising Flour
½ Tsp Baking Powder
4 Tbsp Milk
1 ½ Tbsp Vegetable Oil
1 Tbsp Sugar (Brown or White)
¼ Tsp Vanilla Extract
¼ Tsp Pumpkin Spice or Cinnamon
1 Tbsp Chopped Dates
1 Tbsp Chopped Pecans
1 Munchkin Pumpkin
20g White Chocolate - Melted
Cut the top off the Munchkin Pumpkin and steam this in the microwave for about 2 minutes until soft - Once it has cooled down, scoop out the filling, mash and leave to one side. Don’t forget to steam the ‘lid’ (top of pumpkin) too. I found that there was a lot of pumpkin flesh to scoop out here and it looked pretty when serving.
Whisk together the Flour, Baking powder, Milk, oil, Sugar, Vanilla Extract and pumpkin spice together until it is smooth.
Fold in the dates, pecans and mashed pumpkin.
Depending on the size of your munchkin pumpkin, fill it up with the cake batter until it is around ¾ full as the cake batter does rise. I then put the pumpkin on a plate so it was easier to transport in and out the microwave.
Microwave the pumpkin cake for 1 minute. Every microwave differs so to tell if the cake is cooked, take a knife and test the cake in the middle. If the knife comes out clean, take the cake out. If the knife has cake batter on it, I would put it back into the microwave for another 30 seconds or so.
Once the cake is out of the microwave, I melted some white chocolate and drizzled this over. Finally a pinch of more pumpkin spice and tuck in!

You may also wish to serve it with custard or any ice cream flavour of your choice.
