Ok so the focaccia variations may have turned into a slight obsession from my Caramelized Onion, Olive, Garlic & Mozzarella Focaccia to my Chocolate, Cardamom & Banana Focaccia but I can certainly assure you that this one was definitely a winner at our house.
The last batch was missing something and it was certainly some spice.
I love spicy food and I love Indian food, so I decided to combine the 2 and make some small changes.
This focaccia includes:
Coriander
Garlic
Mozzarella
Fresh Green Chilli’s
Onions
I served it with a traditional Green Chutney which is definitely a staple with any Indian snack at our house. Everyone has their own recipe for green chutney but this is ours.
All the following ingredients are blended together to a smooth sauce. Note that there are no specific quantities as these don’t actually exist in our house for sauces/chutneys. The secret actually just tasting it as you go and you will just know when it’s right, I can guarantee this!
Fresh Coriander
Fresh Garlic
Tamarind Sauce
Fresh Mint
A little water to combine
Fresh Green Chilli’s
Salt and Pepper to Taste

So as always, I made the focaccia using the same recipe as I made for Caramelized Onion, Olive, Garlic & Mozzarella Focaccia with just a slight change of adding finely chopped coriander, onion, green chilli’s and garlic into the dough.
It was then scattered with cubes of mozzarella and baked. You could use cubes of paneer (Indian Cheese) for a slight twist or perhaps a cheddar cheese of your choice.

For the dough:
1kg of Plain Flour
14g Dried Fast Action Yeast
4 Teaspoons of Salt/Sea Salt
350ml – 400ml of Lukewarm Water

Finely Chopped Onions
Salt and Pepper to your taste
