The second dish from my Spicery kit was Tikka Kebabs with Mango Chutney and Raita.
If you read my previous blog (Cajun Blackened Fish with Dirty Rice), you will now know that some members of my family are flexitarian. Therefore I decided to create the best of both worlds by using chicken breasts and Naked Glory Roast Tender strips which are veggie protein fillets. These were delicious and I think the company have really managed to capture that meaty texture and flavour from this product to make any meat lover become vegetarian.
With this Spicery kit, it came with 3 spice sachets (Pictures below):
A Tikka Blend – Which I used half for the Protein Fillets and half for the chicken breasts
A Mango Chutney Blend – I didn’t actually have mangoes to hand... well...I tell a lie, I completely forgot to add them to my shopping list before making this but its these types of situations that gets the creative juices flowing right? So I opted for a tin of peaches instead (Which worked a treat!)
Raita Herbs – To be mixed into some yoghurt.

For the first stage, all you had to do was mix the tikka blend with some yoghurt and salt. I also took this opportunity to add in some yellow bell peppers. I divided the marinade up and mixed it in two separate bowls; one for the chicken and the other for the protein fillets.
I actually ended up having a little more marinade leftover, so I decided to pop some florets of broccoli onto a skewer and grill these too.

The second stage was too easy. In a pan, I added my tinned peaches, mango chutney spice blend and some vinegar. It did say in the recipe to add sugar, but the peaches were already soaked in syrup, therefore I used a little syrup to make up for this.

The final stage was the raita which was even easier! It was just a case of mixing up some yoghurt, the raita herbs and some salt.

I served my feast with some garlic naans that were just shop bought.

I would also like to point out the spice levels of these kits; I honestly did not expect
them to be as hot and spicy, but the spice level was perfection and the only thing I ever had to add was salt. No other flavours needed to be adjusted at all, which is a great reflection of how truly flavourful The Spicery kits really are.
